You can't go wrong with grilled veggies, whether it's grilled zucchini, asparagus, or this smokey and savory eggplant. You can serve this specialty as-is or dress it up to turn it into a vegetarian main course.
Accompanied with our fabulous Canna Seasoning (Smokey Herbs), we've turned something that wasn't that much likable, into something lovable! It's healthy, inexpensive and is a neutral palette to absorb the flavors of sauces and marinades. Simple to make, yet totally delicious! Enjoy!
2 large eggplants (cut crosswire into 1/2 thick slices)
5 TB of olive oil
2 TS of lemon juice
1 TS minced garlic
1 1/4 ts of salt
1/4 cup of parsley
1/4 cup of Canna Seasoning (Smokey Herbs)
Prep Time 10 minutes Cook Time 20 minutes Serving Size 4 - 8
Preheat your oven or grill to 350 degrees.
Start by slicing your eggplant.
Get your bowl and mix olive oil, herbs, spices, Canna Seasoning and fresh garlic.
Place the slices of eggplant in your marinade. Let marinate for at least 20 minutes or up to 2 hours.
Place the eggplant either on a baking sheet if cooking in the oven or on the grill.
Cook 3-4 minutes per each side or until tender and browned.
Sprinkle the eggplant with chopped parsley and Canna Seasoning, then serve.
